Going Green Day 6

My beautiful friend Nicky shared this recipe with me and I thought it would make a great lunch dish or dinner accompaniment along side chicken or fish.

I  would also add more vegetables and tofu or beans as I dont eat animal or fish protien, but this is a great base


Healthy Fried Rice with Kale, Garlic & Chilli

serves 2

1 cup brown rice (uncooked)

1/2 chopped onion

2 cloves garlic chopped

3 cups Kale, finely chopped

2 tbsp tamari

2 tbsp coconut oil

1-2 organic, free range eggs (optional)

chilli flakes (optional)


Cook rice according to instructions, set aside

Heat oil in large saucepan, add onion & stir until soft. Ass garlic and saute for 2-3 mins, add kale and stir until wilted

Add rice and cook for approx 2 mins stirring

At this stage you can choose to add the eggs, crack into separate bowl and add to rice stirring through until cooked

Add tamari, divide and enjoy
